It’s a super versatile, breakfast option! Made it in desi cow ghee & used a special variety of dried chilies called “Cherry Chillies”
It was my first try at making Upma & I guess I did just okay (the water added could have been lesser
Roast 1 bowl suji/ rava/ semolina for 5 minutes in 1 teaspoon ghee – keep stirring continuously until it starts changing color and gets aromatic. Once done, keep it aside.
Then sauté rai(mustard seeds), curry leaves, chilies, peanuts, cashews, soaked urad, and chana dal and roast them properly. Add onions and sauté for 2-3 minutes
Once done, add chopped veggies, salt, pepper, red chili powder & mix well on medium-high flame for 3-6 minutes until veggies turn translucent
Add roasted semolina/ sooji and mix well. Add 2 cups water (or lesser) and let it boil on simmer for 3-4 minutes- keep stirring well so that it gets cooked evenly. Initially, it would be sticky but once it gets cooked, the consistency would change. Cook for 8-10 minutes until water dries up.
